Overview

Cylindroconical fermenters (CCTs or unitanks) have a cylindrical shell and a conical base, typically around 60 degrees, so yeast and sediment can be drawn off from the bottom. Glycol cooling jackets on the shell and cone control fermentation temperature, and pressure rating allows natural carbonation and conditioning in the same vessel. They are insulated and fitted with sanitary valves, CIP spray devices and sampling ports.
